Dixie peanut pie
|
1/4 cup peanut butter
1 cup dark corn syrup
1/2 cup sugar
2 eggs
|
3 tbles. butter
3/4 tbles maple extract
2/3 cup coarsley chopped roasted peanuts
1 9" pie shell, unbaked
|
Heat overn to 325. combine peanut butter, syrup, sugar, eggs and butter in
large bowl. Stir in maple extract and coarsely chopped peanuts.
Pour mixture into unbaked pastry shell. Bake until golden brown, about
55 mins. Cool on wire rack

Honey Apple Pie
|
1 9" pastry shell
1 cup honey
2 tbles. flour
1 teas. cinnamon
|
1/8 teas. salt
6 cups apples, peeled and sliced
1 tbles lemon juice
2 tbles. butter
|
Combine honey, flour, cinnamon and salt. Spread 1/2 of this mixture over
pastry; add apples. sprinkle with lemon juice and dot with butter. Add slitted
top crust, and seal edges. Bake in preheated 425 oven, for 30-40 mins.

Another Pecan (or Walnut) Pie
|
1 cup white corn syrup
1 cup dark brown sugar
1/2 teas. salt
1/3 cups melted butter
|
1 teas. vanilla
3 whole eggs
1 heaping cup pecans
|
Mix syrup, sugar, salt, butter, vanilla. Add lightly beaten eggs. Pour into a 9" unbaked pie shell.
Sprinkle pecans over filling. Bake in 350 pre-heated over for approx. 45. mins.

Honey Pecan Pie
|
1 cup honey
3 well beaten eggs
2 tbles. sugar
1/4 cups nonfat dry milk
|
1/4 cup butter
1 1/2 cups pecan meats
1/2 teas. vanilla
1 9" unbaked pastry shell
|
Mix honey with well-beaten eggs. Cream sugar, dry milk and butter.
Add to honey-egg mixture. Stir in Pecans and vanilla. Turn into pie shell
and bake in pre-heated 375 oven for 1 hr.

Pecan Pie
|
3 eggs
1 cup sugar
1/2 teas. salt
2 tbles butter, melted
1/2 cup dark corn syrup
|
1/2 cup whipping cream
1 teas. vanilla
1/4 cup brandy, optional
1 cup pecan halves
1 9" pie shell

Preheat oven to 375.
In a small bowl, beat eggs, sugar, syrup butter and cream. Stir in vanilla, brandy, and pecans. Pour into pie shell.
Bake 40-50 mins., or until filling is set and pastry is golden brown.
Cool before serving. Pie can be frozen up to several weeks.

"Lethal' Pecan Pie
|
1 1/4 cups dark corn syrup
1 cup firmly packed light brown sugar
4 tbles. unsalted butter
4 large eggs
|
1 teas. vanilla
1/4 teas. salt
2 1/2 cups coarsely broken Pecans
1 9" unbaked pie shell
|
Combine corn syrup and sugar in 1 quart sauce pan and stir over moderate
heat until sugar has dossolved. Let misture boil 2-3 mins. Remove from heat
and stir in butter.
In 2 quart mixing bowl, beat eggs well with wire whisk or electric
mixer. continue to beat while slowly pouring in syrup. Stir in vanilla, pecans
and salt.
Pour half of mixture into unbaked pie shell, place on center
rack of oven. Pour in remaining mixture and bake in preheated, 350 oven for
45-50 mins., or until filling is set.
You may have to cover crust with foil to prevent burning. Serves 8-10.

Country Pecan Pie
|
Pie crust (9 inch)
1 1/4 c Dark corn syrup
4 Eggs
1/2 c Packed light brown sugar
|
1/4 c Butter or margarine; melted
2 ts All-purpose flour
1 1/2 ts Vanilla extract
1 1/2 c Pecan halves
|
Preheat
oven to 350 degrees. Roll pastry on lightly floured surface to form 13" circle.
Fit into 9" pie plate. Trim edges; flute. Set aside. Combine corn syrup,
eggs, brown sugar and melted butter in large bowl; beat with electric mixer
on medium speed until well blended. Stir in flour and vanilla until blended.
Pour into unbaked pie crust. Arrange pecans on top. Bake 40-45 minutes until
center of filling is puffed and golden brown. Cool completely on wire rack.
Garnish as desired.

Cherry Pecan Pie
|
1 c Flour
1/2 c Sugar
1/2 c Butter
1 c Pecans -- broken
|
8 oz Cream cheese
1/2 c Powdered sugar
2 pk Dream Whip
21 oz Cherry pie filling
|
Mix together flour, sugar, butter, and
pecans and pat down in a 9x13 inch cake pan. Bake at 400 F for 12 to 15 minutes.
Cool and break into bite-size pieces. Put back in pan. To make filling, mix
an 8 ounce package cream cheese with 1/2 cup powdered sugar. Prepare Dream
Whip as directed on package. Add cream cheese mixture. Mix well. Pour over
crust. Add 1 can cherry pie filling over top.

Blue Grass Pie
|
1 cup brown sugar
1 cup light corn syrup
4 eggs
1 1/2 teas vanilla extract
|
1/2 cup butter
1 cup whole pecans
1 cup semi-sweet chocolate ships
1 unbaked pie shell
|
Beat
together sugar, corn syrup, egg and vanilla. Melt butter, cool, and beat
into the egg misture. Gently stir in pecans and chocolate chips and pour
filling into pie shell. Bake in preheated, 350 oven for 50-60 mins. until
center is set and top lightly browned.
Serve with whipped cream on ice cream if desired.

Backwoods Pie
|
1 10" pie shell
3/4 cups brown sugar, tightly packed
1 1/2 cups maple syrup
1/2 cup milk or cream
|
4 eggs, separated
2 tbles. melted butter
1/4 teas. freshly grated nutmeg.
1/2 cup walnuts, coarsely chopped
|
Bake the pie shell in a 425 oven for 10mins. Remove the pie shell and set aside, and reduce the oven to 350.
Combine the brown sugar, syrup, milk, egg yolks, butter, nutmeg
and walnuts.Whip the egg whites to stiff peaks and fold them into the syrup
mixture.Gently pour the filling into the pie crust and bake until set, about
45-55 mins.
Serve warm or at room temperature. Serves 6-8.

Shoo-fly Pie (Amish)
|
1 1/4 cups flour
1/2 cups sugar
1/4 teas. cinnamon
1/4 teas. salt
2 tbles vegetable oil
1/2 teas. baking soda
|
3/4 cup boiling water
1/2 cup dark corn syrup
1/4 cup light molasses
1 egg, well beaten
1 9" unbaked pie shell

Conbine flour, sugar, cinnamon and salt. blen in oil and set aside. Dissolve
baking soda in boiling water. Stir in corn syrup and molasses. Let mixtrue
cool. Add egg, mixing well.. Sprinkle 1/2 cup flour mixture into unbaked
pastry shell. Carefully cover with liquid filling. Top with remaining flour mixture.
Bake at 375 for 25-30 mins, or until mixture sets.

Pumpkin Shoofly Pie
|
Topping:
3 tbles butter or marg. 1/3 cups firmly packed brown sugar
1/2 cup flour 1/4 teas. ground cinnamon
Preheat oven to 425. Cut butter into combined brown sugar, flour,cinnamon and salt until misture resembles coarse crumbs.

Filling:
2 eggs, slightly beaten
1 can (16 oz) solid pack pumpkin
1/2 cup firmly packed brown sugar
2 tbles. light molasses
1 can evaporated milk

1/2 teas. salt
1/2 teas. ground cinnamon
1/4 teas ground ginger
1/8 teas. ground allspice
1 9" unbaked pie shell
|
Combine filling ingredients in order except add milk last, pour into pie shell. Bake 15 mins,
Sprinkle topping mixture over pie. reduce oven temp to 350. Continue
baking 45 mins. or until knife inserted near center comes out clean. 1 9"
pie.

Bob Andy Pie (Amish)

2 cups brown or white sugar
2 teas. flour
1/2 teas. cloves
1 tble. butter
|
3 eggs beaten separately
2 cups milk
1 9" unbaked pie shell
|
Mix all ingredients and pour
into an unbaked pie shell. Bake for 45 mins.to 1 hour at 350. The pie will
raise very high while baking but will level out as it cools.

|
1 1/2 cups sugar
1 1/2 cups flaked coconut (6 oz)
1 1/2 cups graham cracker crumbs
1 1/2 cups chopped pecans

7 egg whites, unbeaten
1 10" pie crust
Whipped cream, optional
1 large banana, peeled and thinly sliced, optional

In a large bowl, combine
sugar, coconut, chopped pecans, cracker crumbs, and egg whites in the order
given. Mix well. Do Not Beat. Turn into preheated 350 oven 35-45 mins. or
until filling is set. Do not over bake.
Serve warm or at room temperture. If desired, garnish each slice with whipped
cream and banana slices. Note: This is a very rich pie. Serves about 10.

Apple Praline Pie
|
6 cups canned apple pie slices
1/2 cup sugqr
5 tbles. flour
1/2 teas. cinnamon
1/2 teas. ginger
1/4 teas. salt

1 tbles. lemon juice
2 tbles butter
1/3 cup butter
2/3 cup brown sugar, packed
2/3 cup chopped pecans
9" pie crust, unbaked |
Prick sides and bottom of pastry shell. bake at 400F for 5 mins;
set aside. combine apples, sugar, flour, spices, and lemon juice.
Spoon into pastry shell; dot with 2 tbles. butter. Bake at 400 for 45
mins. Melt 1/3 cup butter in small sauce pan, stir in brown sugar.
Bring slowly to a boil, stirring constantly. Add pecans and pour
over pie. bake at 400 for 5 mins, or until topping bubbles.
